Quiche for Dinner

I rarely (read Never) cook without a recipe, but tonight I had something in my mind that sounded good so I tried it out. Okay, I still didn't make something totally without a recipe. I googled Basic Quiche recipe and found this one http://www.realsimple.com/food-recipes/browse-all-recipes/basic-quiche and modified it to fit my idea. I have to say that it turned out well enough that I thought I better write it down so I don't forget it next time. It's not really pretty, but it was delicious! I served it with a side of marinated heirloom tomatoes. Enjoy!

Mushroom, Spinach and Gruyere Quiche
1 deep dish pie crust or 2 regular pie crusts
4 eggs
3/4 cup of Half & Half
8 oz, Smoked Gruyere cheese ~ grated
2 T. olive oil
1 clove of garlic ~ minced
1 package of Baby Portabella Mushrooms ~ sliced
1 bag of baby spinach

Preheat oven to 375 degrees F. In a large pan heat the olive oil and add mushrooms. Saute until tender. Add garlic and spinach and toss. Cook until spinach is wilted.

In a large bowl, whisk the eggs and half & half together and stir in grated cheese. Add the vegetables and 1/2 t. of salt.

Bake for 35-40 minutes until the center is set.
